So things have been going slow over here on The Last Cookie recently. It’s summer and beautiful sunshine, my mom’s here and basically I’ve just been in a lazy mood. I’ve spent the last few weeks just eating, napping and spending time outdoors. To be honest, I don’t really feel guilty of letting work slide by.
I haven’t done much cooking recently either. My mom’s been busy cooking some of my favorite meals for me. I guess I’ll just have to shake off the laziness and get myself in the kitchen soon one of these days. There are plenty of things I plan to cook for my mother and I should get on with it sooner rather than later.
Coming back to this delicious fennel asparagus soup. Do you still like hot soups in summer or do you prefer to go the cold food way? I can eat soup in any season, even when it is scorching hot outside. The only thing is, I prefer soups that are lighter and have a fresh flavor during the hotter months. This is the perfect soup for that.

The fennel gives it such a fresh anise flavor that it totally screams summer to me. It also makes use of the season’s abundant asparagus and the bright flavor of fresh basil for a herby note. This fennel asparagus soup is basically pretty simple and fuss free. It is ready in 30 minutes and I made it without cream to keep it light. It is still creamy but not too rich so it is easier on the stomach when the weather is hot outside.
This is one of those meals that make you feel so good from the inside. Enjoy it with some crusty bread and you’ll definitely want seconds. It doesn’t have too many ingredients and you can garnish it with pepitas, olive oil and a little bit of yogurt if you prefer. I also love garnishing it with steamed asparagus tips but it is totally optional.

Ingredients
- 450 grams asparagus, chopped and tips separated if using for garnish
- 1 fennel bulb, chopped
- 3 cups vegetable broth
- 1/2 cup fresh basil
- 1 yellow onion, chopped
- 3 garlic cloves, minced
- 2 tbsp olive oil
- Salt and Pepper
- Pepitas
- Olive oil
- Yogurt (omit if Vegan)
- Steamed asparagus tips
Instructions
- Heat a large pot over medium high heat and add olive oil. Add the chopped onion and fennel and sauté for 5 minutes until softened.
- Add the minced garlic and cook for a minute until the garlic is fragrant. Add the broth, cover and simmer over low heat for 10 minutes. Add the chopped asparagus and continue to cook over low heat for 2 more minutes.
- Remove from the heat and once it has slightly cooled, blend along with the basil until the soup is very creamy and smooth.
- Return to the stove over very low heat and add salt and pepper.
- Serve the soup while it is still hot, topped with the garnishes if using.
