Chewy, no bake, healthy granola bars that are easy to make and a great way to keep those pesky hunger pangs at bay!
We’ve never been into granola bars at our home. We never used to buy them or eat them because we just always had something else to eat. A couple of weeks ago though I found out that my husband was sneakily buying granola bars at work when he was super hungry and he had forgotten to pack homemade snacks!
You can totally understand why I would sulk for two hours after I found that out. I’ve been a very vocal advocate of why homemade food is better and how we try to make almost everything we eat at home. After I was done sulking it was time to roll up my sleeves and see what I could do about those homemade granola bars.
I came across Minimalist Baker’s granola bars recipe and I knew straight away it was a no-fuss, easy recipe for someone like me who wasn’t too experienced in making granola bars (and was also particularly lazy that day)! I wanted to adapt and tweak the recipe a bit though since I’m horrible when it comes to following a recipe exactly as it is given.
These chewy, healthy granola bars were a huge hit with my husband (and everyone else at his work). I added a few more ingredients to the original recipe and we ended up with 10 good sized bars. I wasn’t initially planning to put up the recipe for these granola bars. A couple of days ago though, I put up a photo of these on my Instagram and I had so many messages asking for the recipe that I decided to write it up quickly on the blog today.
I love the fact that these homemade granola bars involve no baking at all. It is as easy as throwing a few ingredients together in a bowl, mixing, chilling and slicing up the bars!

Ingredients
- 1 1/2 cups large flake oats
- 1 cup date paste (or pitted dates processed to a pulp)
- 1/4 cup creamy peanut butter
- 1/4 cup honey
- 1/4 cup maple syrup
- 1/2 cup almonds
- 1/2 cup dried figs, chopped
- 1/4 cup walnuts
- a pinch of salt
Instructions
- Preheat the oven at 350 degrees F and line a large baking sheet with parchment paper. Spread the oats, almonds and walnuts on the baking sheet and toast in the oven for 8-10 minutes until golden and nicely toasted.
- Transfer the oats, almonds and walnuts to a large mixing bowl. Add the date paste and chopped dried figs to the bowl along with a pinch of salt.
- In a saucepan, combine honey, peanut butter and maple syrup and place over low heat. Stir together just until melted and then pour over the oats and dates.
- Mix everything thoroughly and then transfer to a parchment lined baking pan (ideally 8x8). Press down with the back of a measuring cup or a glass to flatten the surface.
- Refrigerate for half an hour until the bars are firm. Remove from the baking pan and cut into even sized squares or 10 bars.
