Peaches are in season and I couldn’t be more excited! Whenever we have rushed mornings at home we opt for smoothie bowls for breakfast. They’re so quick to put together, versatile and delicious. With the abundance of fruits now available, it is even more fun to put together different smoothie recipes and enjoy them at any time of the day.
This particular smoothie is lusciously thick with a velvety feel and a very vibrant, summery taste that makes it refreshing for the warm weather. I like to top the bowls with a variety of toppings, depending on what I have on hand at home. This particular smoothie bowl has three main ingredients- peach, avocado and kale. An added bonus is that these are incredibly nutritious.
Peaches are an excellent source of Vitamin C, Vitamin A, fiber and potassium. These fuzzy fruits support heart health and have anti-inflammatory and anti-obesity properties. Avocados are nutrient-dense and include nearly 20 minerals, vitamins and nutrients. Kale is a super food and is considered the king of greens because it is an incredible source of Manganese, Vitamin C, Vitamin K and Vitamin A. Kale is also very rich in antioxidants.
Without a doubt, starting the day with a power-packed smoothie like this one provides good energy throughout the day. Considering how quick it is to put together, I consider it a winner on all counts!
Ingredients:
1 ripe peach
1 small avocado
1/2 cup of kale
Juice of half a lemon
1 tbsp of mixed roasted seeds (optional)
1 tbsp of raisins (optional)
1 tbsp of coconut flakes (optional)
Water as required
Remove the skin and pit of peach and chop roughly. Cut an avocado in half, remove the seed and scoop out the flesh. Place the peach, avocado, lemon juice and kale in a blender and puree until smooth. Add water as required to thin it out to a consistency you’re happy with.
Serve the smoothie in a bowl, topped with roasted seeds, raisins and coconut flakes.
